Chicken Tinga Tacos

  • Spiced Tomato Sauce (for the chicken Tinga Tacos) - 3 oz.
  • Grilled chicken, diced 1/2 " - 3 oz.
  • Corn tortillas, 4" - 6 each
  • Cabbage blend- shredded - 3 tbs.
  • Feta cheese- crumbled - 3 tbs.
  • Cilantro, leaves - 3 tsp.
  • Avocado Chipotle Ranch - 1.5 oz.

  1. Blend the sauce with chicken and heat through.
  2. Heat the tortillas on the flat top. 2 tortillas per taco. Slight overlapping.

  3. Place the tortillas on the plate. Place the 1 tbs. of cabbage blend, 1 tbs. chicken in sauce.

  4. Finish by sprinkling the cheese over each tortilla, drizzle the avocado chipotle ranch, and top with cilantro leaves.


Chicken Tinga Braising sauce

  1. Tomato sauce - Quart 2
  2. Cilantro, chopped - Cups 2
  3. Chipotle in adobo - Oz. 8
  1. Heat the tomato sauce in a pot and add in the chipotle pepper. Cook over low heat for 1/2 hour. Then use an immersion blender and blend until smooth.

  2. Place the sauce back on the heat and add the cilantro. Simmer for an additional 10-15 minutes over low heat.
  3. Place the spiced tomato sauce in a storage container and cool until needed.

Avocado Chipotle Ranch

  1. Cilantro leaves - Cup 1
  2. Hidden Valley Ranch dressing - Cups 3
  3. Granulated Garlic - Tbl 1
  4. Salt - Tbl 2
  5. Lime juice - Cup 1/4
  6. Avocado, crushed - Cup 1
  7. Chipotle in adobo, chopped - Cup 1/4
  1. In a  clean bowl combine all the ingredients with an immersion blender and incorporate well.

  2. Pour the dressing into a clean container and hold in the refrigerator until needed.
