  • Garlic, roasted , chopped - 1 Cup
  • Crab meat, lump - 8 LB
  • Cauliflower rice - 10 Cups
  • Red bell pepper, diced 1/4" - 3 Cups
  • Eggs, whole - 8 Each
  • Old bay seasoning - 3 Tbl.
  • Panko bread crumbs - 4 Cups
  • Dijon mustard - 4 Tbl
  • Hidden Valley Ranch dressing - 2 Cups
  • Salt, kosher - 3 Tbl
  • Black pepper, ground - 1 Tbl
  • Phase, LBA - 1/4 Cup

  1. Add oil to the saute pan heat on the stove to a medium high, get the oil hot and cook the carrots, celery ,onions and peppers until soft. Then add the cauliflower rice and cook for an additional 2 minutes. Place the vegetables on a sheet pan to cool.

  2. In the mixing lightly break up all of the crab meat and add in the remainder of the ingredients. Also once the vegetables have cooled add them to the bowl as well. Gently  mix the ingredients together without over mixing until everything is completely incorporated.

  3. Portion the crab cakes into 2-1/2 oz. round pucks.
