Seoul St. Patrick’s Brisket Bacon Meatloaf

Ingredients:
- Ground Brisket of beef - 2 Lbs.
- Eggs, whole - 5 Each
- Bell pepper, green, cut up rough - 1 Each
- Bell pepper, red, cut up rough - 1 Each
- Onion, yellow cut up rough - 1 Each
- Celery, ribs, cut up rough - 2 Each
- Garlic, whole peeled - 1/4 Each
- Sweet chili sauce - 1/2 Cups
- Salt, kosher - 3 Tbl
- Black pepper, ground - 3 Tbl
- Cilantro, fresh, chopped - 1/2 Cups
- Panko breadcrumbs - 2 Cups
- Bacon, cooked, chopped - 2 Cups
- Gochujang Korean pepper sauce - 2 Cups
- Mozzarella cheese, shredded - 2 Cups
Preparation:
- In a large mixing bowl add all the ingredients together except for the vegetables and cilantro.
- In a food processor add the vegetables. Chop all the vegetables small. Pour into the meat mixture.
- Add the cilantro and mix the entire ingredients well.
- Using a loaf pan, spray the inside well with pan coating, place the meatloaf mix into the pan till it is full to the top with a ½ inch lip. Drop the loaf pan on the table a few times to ensure all the air is released.
- Cover with foil and cook in a 350- degree oven for 60 minutes and uncovered for 15 minutes enough to brown.
- Once the meatloaf has the internal temperature of 165 degrees, pull from the oven and let cool in the pan completely before slicing.
- Reserve the pan drippings and add to your favorite BBQ sauce for sauce accompaniment.
