Roasted Pork Tenderloin

Marinated in a flavorful mixture of fresh herbs and spices, this soft and juicy pork tenderloin is well worth the time it takes to prepare, with a level of quality that tastes like it came from the most high-end kitchens.
Ingredients:
- Salt and pepper - 2 Tbl
- Fennel Seed, toasted and slightly crushed - 3 Tbl
- Olive oil, for searing - 1/4 Cup
- Lemon juice, fresh squeezed - 1/4 Cup
- Olive oil - 1/4 Cup
- Fresh thyme, chopped - 1 Tbl
- Pork Tenderloin - 2 Each
- Chopped garlic, fresh - 2 Tbl.
Preparation:
- Mix all the herbs, spices, lemon juice and 1/4 cup olive oil together. Combine well
- Pour over the pork tenderloin and let marinade for 2-3 hours.
- Pull the pork tenderloin from the marinade.
- Heat pan with the additional 1/4 cup of olive oil and sear the pork tenderloin on all sides until golden brown.
- Roast in the oven at 325 degrees until the internal temp Is 145 degrees
- Slice into 1 " medallions
