Roasted Pork Tenderloin

Marinated in a flavorful mixture of fresh herbs and spices, this soft and juicy pork tenderloin is well worth the time it takes to prepare, with a level of quality that tastes like it came from the most high-end kitchens. 

Ingredients:

  • Salt and pepper - 2 Tbl
  • Fennel Seed, toasted and slightly crushed - 3 Tbl
  • Olive oil, for searing - 1/4 Cup
  • Lemon juice, fresh squeezed - 1/4 Cup
  • Olive oil - 1/4 Cup
  • Fresh thyme, chopped - 1 Tbl
  • Pork Tenderloin - 2 Each
  • Chopped garlic, fresh - 2 Tbl.

Preparation:

  1. Mix all the herbs, spices, lemon juice and 1/4 cup olive oil together. Combine well
  2. Pour over the pork tenderloin and let marinade for 2-3 hours.
  3. Pull the pork tenderloin from the marinade.
  4. Heat pan with the additional 1/4 cup of olive oil and sear the pork tenderloin on all sides until golden brown.
  5. Roast in the oven at 325 degrees until the internal temp Is 145 degrees
  6. Slice into 1 " medallions
