Freshness is the name of the game with this recipe for the ultimate summertime salad. Calling for local watermelon and tomato served at the peak of ripeness.

Ingredients:

  • Pine nuts, toasted - 1 tbs.
  • Watermelon, peeled/diced 1" - 2 cups
  • Feta cheese, crumbled - .25 Cup
  • Marie’s® Blueberry Pomegranate Vinaigrette - 2.5 oz.
  • Tomatoes, Heirloom dice 1" - 2 cups
  • Mesclun lettuce blend - 2 cups

Preparation:

  1. In a bowl toss the all the ingredients except for the cheese and pine nuts, combine gently.

  2. Place the tossed product into the serving bowl place the lettuce down into the bowl and creating a hole in the center for the tomato and watermelon. Stack the watermelon and tomatoes in the bowl creating height.
  3. Finish by sprinkling the feta cheese and pine nuts over the top.
