Kalamata Olive and Cucumber Relish

Flavored with kalamata olives and diced cucumbers, your customers will truly relish this delightful condiment. It’s a good thing the prep time is short because you’ll be making a lot once the word gets out.


  • Marie’s® Italian Vinaigrette - 1 Cup
  • Kalamata olives, chopped - 1 Cup
  • Tomatoes diced 1/4" - 2 Cups
  • Lemon juice, fresh - 1/4 Cup
  • Cucumber, diced 1/4" - 2 Cups
  • Feta cheese, crumbled - 1/2 Cup
  • Salt and pepper mix - As needed
  • Basil, Fresh, diced small - 1/2 Cup

  1. Mix all the ingredients in a  clean bowl and combine well.

  2. Place In a clean storage container and hold for service in the refrigerator until needed.

Serving Suggestions: Good to serve over fish or shrimp, or use it with hummus.
