Garlic Parmesan Pesto Chicken Salad
Flavored with a savory garlic parmesan and pesto vinaigrette, this delightful grilled chicken salad is remarkably simple to prepare and has an appetizing zest that will make it a highlight of your salad menu.
Ingredients:
- Shredded parmesan cheese - 1 Tbl
- Diced cucumbers - 2 Oz.
- Shredded carrots - 2 Oz.
- Mixed salad greens - 2 Cups
- Grilled chicken breast, diced - 4 Oz.
- Diced tomatoes - 2 Oz.
- Garlic Parmesan Pesto Vinaigrette - 2-1/2 Oz.
Preparation:
- In a mixing bowl place all the ingredients together except for the shredded cheese and combine well.
- Place the mixed salad in the bowl and sprinkle the cheese over the top of the salad.

- Hidden Valley Golden Italian or Italian dressing - Cups 3
- Sauce Craft Garlic Parmesan - Cups 2
- Sauce Craft Basil pesto - Cup 1
- Black pepper, ground - Tbl 1
- Red wine vinegar - Cup 1
- Salt and pepper mix - as needed

Instructions:
In a clean mixing bowl combine all the ingredients together and blend well.
If a more sharper acidic flavor profile is desired add in more red wine vinegar to the dressing. Add in salt and pepper if additional flavor is needed.
Place the completed salad in a clean container and hold in the refrigerator until needed.
