Blackened Fish Tacos
Treat your customers to craveable fish tacos with an outstanding fire-grilled flavor. Our special recipe for blackened fish gives the meat a delicious, charred crust while being much easier to prepare for your kitchen staff.
Ingredients:
- Fish, chef's choice - 3 oz.
- Cajun seasoning - 1 tbs.
- Flour tortilla, 6" - 3 each
- Cilantro, leaves - 3 tsp.
- Lime wedges, 1/6th cut - 2 each
- Roasted Corn Salad - 3 tbs.
- Apple Cabbage Slaw - 3 Tbs
- Garlic Aioli - 1.5 oz
Preparation:

Heat the tortillas on the flat top and place them on the plate and keep warm.

On the flat top place the fish and sprinkle the Cajun spice and cook quickly on the flat top. Allow the fish to sear good on both sides to cook through.

Place the apple slaw on the tortillas, proceed with the fish, then top the fish with the roasted corn salsa.

Drizzle with the garlic aioli and finish with the cilantro leaves on each of the tacos.

Butt up the tacos together on the plate and place lime wedges on both sides of the tacos.

Ingredients:
- Peppers, green diced 1/4" - Cup 1
- Tomatoes, diced 1/4" - Cup 1
- Green onions, sliced 1/4" - Cup 1
- Hidden Valley® Golden Italian Dressing - Cup 1
- Cilantro fresh , chopped - Cup 1
- Red onion, diced 1/4" - Cup 1
- Radish, sliced thin - cups 2
- Roasted corn kernels - cups 3
- Salt and pepper mix - As needed

Instructions:
In a clean bowl mix all the ingredients together except for the salt and pepper and combine well. Add in salt and pepper as needed for additional flavor.
Pour into a clean storage container and hold in the refrigerator until needed.
Apple Cabbage Slaw

Ingredients:
- Red cabbage, shredded - Cup 1/2
- Granny Smith Apples, julienne,1/4" - Cups 2
- Cabbage shredded, green - Cups 2
- Hidden Valley® Golden Italian Dressing - oz. 3-4
- Carrots, shredded - Cup 1/2
- Salt and pepper mix - As needed

Instructions:
- In a mixing bowl combine all ingredients together and toss well.
Add in salt and pepper as needed for flavor.
Place slaw in storage container and hold in the refrigerator until needed.
